What's For Breakfast?

I love my old Wagner skillet.  I couldn't begin to guess how many miles it has on it.  It belonged to my sis, and holds a special place in my heart ~ as well as my kitchen.

It's perfect for sauteing veges, or crisping up quesadilla.

And I love breakfast.  I could eat it three times a day.

One of my go-to breakfasts is spinach scramble ~
green onion, mushrooms, tomatoe, and olives
sauteed in olive oil with diced Canadian bacon.
I spice it up with salt, pepper and garlic,
add a combo of eggs and egg beaters or egg whites,
and top it with a light sprinkling of feta cheese.

Add wholewheat toast and you have a grand meal.

Some things never go out of style...
like a good ol' cast iron skillet, or an easy-peasy recipe.
They're my favorite things today!

  1. Howdy! It's been awhile.

I have a favorite old skillet belonging to my mother and it is seasoned so well and works so great. I don't know about a Wagner, but I have coveted a Lodge.

Now this breakfast sounds like a California one...great!

  2. We love cooking with cast iron too. Nothing like corn bread in cast iron. I just bought a Wagner Ware square fryer at an estate sale. I know yours is a treasure because it was your sister's. big hugs, olive

  4. Yum, that sounds like a very healthy and delicious breakfast! Some recipes just need a cast iron skillet to bring out the flavor.......and the really special ones often have a wonderful family history attached.

    Happy weekend Susy -

  6. I am so glad to see you sweet smiling face..........Your breakfast receipt sounds delicious and very different from our traditional southern fare so I think it would be fun to try it.....
Another southern dish you just have to cook in a cast iron skillet is cornbread.....My mother in law gave me one when we got married so you can see how important they are to us here in the south...She thinks a kitchen without one is not really a kitchen..hahahahaha

I hope you have a wonderful weekend; we are getting snow....yuk....

I've got a favourite pan too - mine is Le Creuset - it's almost too heavy for my wrists to hold now....

  10. We need a new skillet, Susy. I'm thinking of going back to the tried and true - a cast iron skillet. And breakfast? My favorite meal. Always.

Thanks so much for joining in this week, my friend.

  13. I've never heard of Wagner Ware but I adore cast iron. I kept a couple of my mom's frying pans, a small and a large ... ones both she and my dad would make me pancakes in when I was a child. Actually, my dad was the better pancake maker! :)

Your scramble sounds so yummy! I love feta on eggs - I like to make a kind of Greek or Mediterranean scramble, kalamata olives, tomato, onion, peppers and feta. Tasty.

    Happy week to you!

  14. Yum! I am making your scramble as soon as I can get the ingredients together. I will be looking for a Wagner too.
My sis ended up with my Mom's cast iron skillets and dutch oven. I have no idea what brand they were and I'm sure they are long gone. I read back on a few of your posts. Wow!! I have missed a lot. Missed you too. Loved the bear post. How special for you and your sis to have something sew sweet made from your Mom's stole. Your inspirational posts are always so special to me. Promise not to stay away so long again.
